Should be fine to watch YouTube, so long as you have not kept your Gmail account open or logged into the same browser. Also dont log into YouTube if that helps in terms of maintaining privacy, which I assume you are doing

I would recommend just setup and use your own VPN + Tor and that should be enough.

Something to consider though:
Try to determine whether your definition of “anonymous” means “more private”. Attempting to come close to true anonymity is insanely intense.

Like, who do you wish to be tracked less by? Your ISP? Google? Government intelligence? You will exhaust yourself if you prepare for an adversary you’ll never have to defend against.

I’m talking about using any VPN Service that you do not own and control the nodes. You really think that any VPN service isn’t going to cooperate with a Federal Subpoena? They’re gonna hand over the logs right away. The only VPN’s that I trust using is an OCat VPN Tor Hidden Service that YOU have created and maintain or your other option is creating an OpenVPN server that only YOU have access to. That way you are the one who actually sets the logging options and you know that your traffic isn’t being inspected or manipulated.

Yes, I do. A VPN provider based in (say) Belarus is not going to give a single solitary shit about a subpoena from the US.
