I just got and downloaded Surfshark. When I went to go activate it, I noticed that my wifi symbol wasn’t showing up as “connected to VPN”. I then went to my VPN settings and tried to add it to my VPN list, but when I did, the “VPN Provider” box only has the “Windows (Built-in)” option. Is there a step I’m missing that would make my Surfshark VPN actually register as a VPN on my computer?

That is not how surfshark works. You start the vpn from the surfshark app. It uses its own drivers.
Hey A good way to check if the Surfshark app has connected on Windows is to go to the network adapters screen:
In Windows 10, click Start > Search for “Control Panel” and open it > Network and Internet > Network and Sharing Center > Change adapter settings. You should see at least one of these adapters: “SurfsharkWireguard” or “OpenVPN Data Channel Offload”. Alternatively, you can check your connection at surfshark.com/check
So it doesn’t appear as a vpn to my computer even though it is?
Look under network adapters if a open vpn or wire guard adapter is connected while connected ojn surfshark
It is not a Windows vpn. It uses its own virtual network adapter. So yes
