With Opera’s VPN enabled would an employer be able to easily determine what (job search) sites I’m looking at/going to?

If it’s working as it should, no.
For the most part I can say No. I have access to the FW logs and look at what traffic is being logged when I’m using Opera with the VPN - all I see is the traffic going out HTTPS to the VPN server.
Having said that though I have to admit that if your company has gone beyond the normal security controls and implemented something that would force your machine to decrypt at a border proxy and then onto the Opera Proxy that there “might” be a way for them to see more of the sites you’re visiting. This would take some pretty intensive setup so not many companies are going through the setup/expense of maintaining it.
