Can I take an old system and turn it into a VPN server that will be connected between my modem and home router?
What I’m looking for is a way to put my entire home network on a personal VPN. I’ve been told that I could do this with a Linux OS and OpenVPN, but I’m not seeing anything in my searches that supports this particular method.
Is this even possible and does anyone know of a detailed guide?

Yes, this is possible. What you’re actually wanting is VPN client functionality for your whole network, along with a VPN server that’s let’s you connect back to your home network. This is relatively simple with a router OS like pfSense or OPNSense. On straight Linux or BSD the search terms you should be using are things like “whole network VPN gateway.”
You should be able to. Biggest obstacle is setting up dynamic DNS. It is possible your IPS will change your IP address. A dynamo a dns will help you connect without needing to manually change your IP address when this happens.
As far as the VPN, you should be able to do it on several devices, even your main PC. I would search “setup home VPN server” or something similar to that, you should find some guides. I use PiVPN on a Raspberry Pi and it works well.
Like the person says above, this is possible. It depends on the network you are using. You want to connect your home to your digital identity so you need to register with a commercial VPN Provider if you want obscuration. Check out Hotspot VPN; they allow this.
